1.12.2 is four years of updates further along than 1.8.8, and it shows most in building and survival. You get concrete and glazed terracotta, the full range of coloured beds and shulker boxes, observers and other redstone components, plus llamas, parrots and the rest of the mob additions from that era.
It's also the version an enormous amount of the Minecraft modding community settled on, so its block palette and mechanics are the ones most long-time players have muscle memory for.
The trade-off is weight. 1.12.2 asks more of your device than 1.8.8 does. On a modern laptop that's a non-issue; on an older school Chromebook, 1.8.8 will run better.
Both connect to CarrotCraft automatically. Either way the first load caches the game, so returning visits start much faster.
1.8.8 and 1.12.2 are both part of CarrotCraft, and all four gamemodes - Survival, Skyblock, Practice and Pitfall - are available. You can switch versions whenever you like.

Any time. Both versions are part of the same CarrotCraft network and all four gamemodes are available on each - just open the other client from the play page.
No. The client loads in the tab and caches its assets, so the first visit takes the longest and later visits start much faster. The JavaScript build is a large first download, so prefer WASM on a slow connection.
